Vegan Spaghetti Carbonara
Servings: 4

INGREDIENTS
12 ounces spaghetti
3 cups shiitake mushroom caps, thinly sliced
3 tablespoons olive oil
½ teaspoon smoked paprika
½ teaspoon salt
¼ teaspoon pepper
½ cup cashews, soaked overnight
¼ cup olive oil
⅓ cup unsweetened non-dairy milk
3 cloves garlic, chopped
1½ tablespoons nutritional yeast
1½ tablespoons lemon juice
½ teaspoon pepper
1 teaspoon salt
¼ teaspoon paprika
Parsley, for serving

PREPARATION
1. Preheat oven to 375°F (190°C).
2. Cook pasta according to package instructions.
3. Toss shiitake mushrooms, oil, smoked paprika, salt, and pepper in a medium bowl.
4. Arrange mixture on parchment paper-lined baking sheet and bake for 8 minutes. Flip the mushrooms and continue baking for 8-9 minutes, or until mushrooms are crispy and brown.
5. Cool mushroom slices on baking sheet.
6. For the sauce, combine cashews, olive oil, garlic cloves, nutritional yeast, milk, lemon juice, pepper, salt, and paprika in a blender or food processor. Blend until smooth and creamy.
7. Drain water from pasta and return pasta to pot.
8. Add the sauce and stir until pasta is well-coated.
9. Mix in mushroom bacon.
10. Top with parsley, and enjoy!

INGREDIENTS
1 cup lentils, rinsed
2 cups vegetable broth
1 teaspoon salt
½ teaspoon pepper
2 teaspoons chili powder
2 teaspoons cumin
1 teaspoon oregano
1 15-ounce can corn, drained and rinsed
1 15-ounce can black beans, drained and rinsed
1 pound tortilla chips
1½ cups shredded Mexican cheese blend
1 cup shredded lettuce
1 cup tomatoes, diced
½ cup red onion, chopped
2 jalapeños, sliced
⅓ cup cilantro, chopped

PREPARATION
1. Preheat oven to 350˚F (175˚C).
2. In a large pot, over medium-high heat, bring lentils, broth, salt, pepper, chili powder, cumin, and oregano to a boil. Once boiling, reduce to a simmer, cover and cook for 35 minutes.
3. Once cooked, mix in the corn and black beans.
4. On a baking sheet, place a layer of tortilla chips, followed by the lentil mixture and cheese. Add another layer of tortilla chips, lentils, and cheese.
5. Bake for 8-10 minutes, or until the cheese has melted.
6. Top with lettuce, tomatoes, red onion, jalapeños, cilantro, and guacamole.
7. Enjoy!

Microwave Meal-Prep Lasagna

INGREDIENTS

½ cup ricotta cheese
¼ cup spinach, chopped
2 tablespoons parsley, chopped
2 tablespoons grated Parmesan, divided
½ teaspoon salt
¼ teaspoon pepper
¼ cup marinara sauce
4 no-boil lasagna noodles, broken in half
½ cup mozzarella

PREPARATION

1. In a small bowl, mix the ricotta, spinach, parsley, one tablespoon of 2. Parmesan, salt and pepper until combined.
3. In the glass container, spread a layer of tomato sauce.
4. Top the tomato sauce with the lasagna noodles and cover the noodles with a layer of the ricotta mixture.
5. Top the ricotta with another layer of tomato sauce and a layer of mozzarella.
6. Continue with another layer of noodles and repeat.
7. Cover the top layer of lasagna noodles with more tomato sauce and a layer of mozzarella and Parmesan.
8. Place the lid on the glass container, without locking it closed.
9. Microwave for 7 minutes or until the cheese is melted through.
10. Remove from the microwave carefully, the container will be hot!
11. Allow to cool and refrigerate, or enjoy immediately. Enjoy!

GENERAL TSO’S TEMPEH
Servings: 4

INGREDIENTS
16 ounces tempeh
¼ cup cornstarch
1 teaspoon paprika
4 cloves of garlic, sliced, divided
4 teaspoons ginger, grated, divided
2 tablespoon sesame oil, divided
2 tablespoons rice wine
4 tablespoons soy sauce, divided
¼ cup oil
½ teaspoon red pepper flakes
1 tablespoon tomato paste
¼ cup vegetable broth
1 tablespoon rice vinegar
1 tablespoon honey
1 tablespoon cornstarch
2 tablespoons water

PREPARATION
1. Chop the tempeh into chicken nugget-sized pieces and transfer to a mixing bowl.
2. Add the cornstarch, paprika, ginger, garlic, sesame oil, rice wine, and soy sauce to the bowl and mix until incorporated. Cover and chill in fridge for 1 hour minimum.
3. Add oil to a pan on medium-high heat and pan-fry tempeh until browned on both sides. Remove from pan.
4. In the same pan, add in oil and sesame oil on medium-high heat.
5. Add the garlic, ginger, and red pepper flakes, and cook until golden brown and aromatic, about 1 minute.
6. Add the tomato paste and vegetable broth, and stir until incorporated.
7. Add the soy sauce, rice vinegar, and honey, and stir until all are incorporated.
8. Combine the cornstarch with the water in a small bowl until paste forms. Add into sauce mixture and stir until sauce thickens.
9. Return the tempeh to the pan and allow to incorporate with the sauce.
10. Enjoy!

Microwave Prep Breakfast Sandwiches
Servings: 5

INGREDIENTS
2 sausage patties
2 slices ham, quartered
5-6 eggs
Splash of milk
Salt, to taste
Pepper, to taste
2-3 strips bacon, sliced in half width-wise
5 English muffins, halved
5 slices cheddar cheese
Spinach

PREPARATION
On a large plate, arrange the sausage and the ham in a circle, then place a microwaveable mug in the center.
Crack the eggs into the mug, season with salt, pepper, and add a splash of milk. Stir until evenly mixed.
Microwave the entire plate for about 2 minutes until the egg is cooked through, making sure it does not bubble over.
Remove the plate and microwave the bacon strips on a separate plate for about 4-7 minutes. Check the bacon at 4 minutes, then every minute or so to make sure it doesn’t burn.
Drain the bacon of its fat, then set aside.
Invert the mug with the egg, then slice the egg cylinder into 5 equal rounds. You may have to run a knife around the mug first to ensure that the egg comes loose in one solid piece.
To assemble, layer your sandwich as you’d like with the meat, egg, cheese, and spinach.
Wrap each sandwich in a damp paper towel, then with parchment paper. Place the sandwiches in a large zip top bag, then freeze for up until 1 month.
When ready to eat, remove a sandwich from the freezer, unwrap the parchment, and microwave for about 2 minutes. Cool for 1 minute, then unwrap the paper towel.
