EASY SALMON DINNER VS. GOURMET SALMON DINNER

Easy Salmon Dinner
Servings: 2

INGREDIENTS
1 pound potatoes
Olive oil, to taste
Salt, to taste
Pepper, to taste
3 tablespoons lemon juice
2 garlic cloves, minced
½ teaspoon onion powder
½ teaspoon paprika
½ teaspoon dried thyme
½ teaspoon dried parsley
2 tablespoons honey
2 salmon fillets
1 bunch asparagus

PREPARATION
1. Preheat oven to 400˚F (205˚C)
2. Add potatoes to a parchment paper-lined baking sheet.
3. Season with olive oil, thyme, salt, and pepper.
4. Bake for 20 minutes.
5. To prepare salmon marinade, combine lemon juice, garlic, onion powder, paprika, thyme, parsley, and honey, and stir until evenly combined.
6. On the same baking tray, push the potatoes to one side of the tray and add salmon and asparagus.
7. Season the salmon and asparagus with olive oil, salt, and pepper. Brush the marinade on the salmon.
8. Bake for 12-14 minutes or until salmon is cooked.
9. Enjoy!

Gourmet Salmon Dinner
Servings: 2

INGREDIENTS
2 salmon fillets
Salt, to taste
Pepper, to taste
Thyme, to taste
Olive oil, to taste

4 cloves garlic, minced
2 pounds potatoes, boiled
2 shallots, thinly sliced
5 tablespoons butter, divided
½ cup whole milk
1 teaspoon salt
½ teaspoon white pepper
1 cup porcini mushrooms, trimmed
1 bunch asparagus, ends trimmed
2 salmon fillets
Salt, to taste
Pepper, to taste
Thyme, to taste
Olive oil, to taste

PREPARATION
1. In a medium-sized pan on medium high heat melt 3 tablespoons butter and add shallots. Cook for 3-4 minutes.
2. Add garlic and 2 more tablespoons of butter into pan and continue to cook for another 3-4 minutes, stirring frequently.
3. Add milk, white pepper, and salt to pan and stir until incorporated.
4. Transfer the shallot mixture to a food processor and process into a paste.
5. Mash potatoes and incorporate shallot mixture and continue to mash until fully incorporated.
6. Add olive oil to a large pan over medium heat and add in the mushrooms, cooking for 5 minutes, stirring occasionally.
7. Add the asparagus to the pan and season with salt and pepper, cooking for 5 minutes.
8. On a cutting board, cut 4 slits into salmon skin roughly a quarter inch apart and ½-inch into the salmon.
9. Season salmon with salt, pepper, and thyme.
10. Add olive oil to a medium pan on medium-high heat and place the salmon skin-side down.
11. Cook for 3-4 minutes or until a lighter pink color has reached ⅓-½ of the way up the side of the salmon.
12. Flip salmon and immediately add the butter, garlic, and thyme.
13. Stir the garlic and thyme around the pan to infuse the flavors and spoon the butter onto salmon.
14. Allow salmon to cook through, roughly 2 more minutes. Transfer the salmon to a paper towel-lined plate.
15. Add the potato puree to a plate, and top with mushrooms, asparagus, and salmon.
16. Enjoy!

Vegan Spaghetti Carbonara
Servings: 4

INGREDIENTS
12 ounces spaghetti
3 cups shiitake mushroom caps, thinly sliced
3 tablespoons olive oil
½ teaspoon smoked paprika
½ teaspoon salt
¼ teaspoon pepper
½ cup cashews, soaked overnight
¼ cup olive oil
⅓ cup unsweetened non-dairy milk
3 cloves garlic, chopped
1½ tablespoons nutritional yeast
1½ tablespoons lemon juice
½ teaspoon pepper
1 teaspoon salt
¼ teaspoon paprika
Parsley, for serving

PREPARATION
1. Preheat oven to 375°F (190°C).
2. Cook pasta according to package instructions.
3. Toss shiitake mushrooms, oil, smoked paprika, salt, and pepper in a medium bowl.
4. Arrange mixture on parchment paper-lined baking sheet and bake for 8 minutes. Flip the mushrooms and continue baking for 8-9 minutes, or until mushrooms are crispy and brown.
5. Cool mushroom slices on baking sheet.
6. For the sauce, combine cashews, olive oil, garlic cloves, nutritional yeast, milk, lemon juice, pepper, salt, and paprika in a blender or food processor. Blend until smooth and creamy.
7. Drain water from pasta and return pasta to pot.
8. Add the sauce and stir until pasta is well-coated.
9. Mix in mushroom bacon.
10. Top with parsley, and enjoy!

1 cup lentils, rinsed
2 cups vegetable broth
1 teaspoon salt
½ teaspoon pepper
2 teaspoons chili powder
2 teaspoons cumin
1 teaspoon oregano
1 15-ounce can corn, drained and rinsed
1 15-ounce can black beans, drained and rinsed
1 pound tortilla chips
1½ cups shredded Mexican cheese blend
1 cup shredded lettuce
1 cup tomatoes, diced
½ cup red onion, chopped
2 jalapeños, sliced
⅓ cup cilantro, chopped

PREPARATION
1. Preheat oven to 350˚F (175˚C).
2. In a large pot, over medium-high heat, bring lentils, broth, salt, pepper, chili powder, cumin, and oregano to a boil. Once boiling, reduce to a simmer, cover and cook for 35 minutes.
3. Once cooked, mix in the corn and black beans.
4. On a baking sheet, place a layer of tortilla chips, followed by the lentil mixture and cheese. Add another layer of tortilla chips, lentils, and cheese.
5. Bake for 8-10 minutes, or until the cheese has melted.
6. Top with lettuce, tomatoes, red onion, jalapeños, cilantro, and guacamole.
7. Enjoy!

Microwave Meal-Prep Lasagna

INGREDIENTS

½ cup ricotta cheese
¼ cup spinach, chopped
2 tablespoons parsley, chopped
2 tablespoons grated Parmesan, divided
½ teaspoon salt
¼ teaspoon pepper
¼ cup marinara sauce
4 no-boil lasagna noodles, broken in half
½ cup mozzarella

PREPARATION

1. In a small bowl, mix the ricotta, spinach, parsley, one tablespoon of 2. Parmesan, salt and pepper until combined.
3. In the glass container, spread a layer of tomato sauce.
4. Top the tomato sauce with the lasagna noodles and cover the noodles with a layer of the ricotta mixture.
5. Top the ricotta with another layer of tomato sauce and a layer of mozzarella.
6. Continue with another layer of noodles and repeat.
7. Cover the top layer of lasagna noodles with more tomato sauce and a layer of mozzarella and Parmesan.
8. Place the lid on the glass container, without locking it closed.
9. Microwave for 7 minutes or until the cheese is melted through.
10. Remove from the microwave carefully, the container will be hot!
11. Allow to cool and refrigerate, or enjoy immediately. Enjoy!

GENERAL TSO’S TEMPEH
Servings: 4

INGREDIENTS
16 ounces tempeh
¼ cup cornstarch
1 teaspoon paprika
4 cloves of garlic, sliced, divided
4 teaspoons ginger, grated, divided
2 tablespoon sesame oil, divided
2 tablespoons rice wine
4 tablespoons soy sauce, divided
¼ cup oil
½ teaspoon red pepper flakes
1 tablespoon tomato paste
¼ cup vegetable broth
1 tablespoon rice vinegar
1 tablespoon honey
1 tablespoon cornstarch
2 tablespoons water

PREPARATION
1. Chop the tempeh into chicken nugget-sized pieces and transfer to a mixing bowl.
2. Add the cornstarch, paprika, ginger, garlic, sesame oil, rice wine, and soy sauce to the bowl and mix until incorporated. Cover and chill in fridge for 1 hour minimum.
3. Add oil to a pan on medium-high heat and pan-fry tempeh until browned on both sides. Remove from pan.
4. In the same pan, add in oil and sesame oil on medium-high heat.
5. Add the garlic, ginger, and red pepper flakes, and cook until golden brown and aromatic, about 1 minute.
6. Add the tomato paste and vegetable broth, and stir until incorporated.
7. Add the soy sauce, rice vinegar, and honey, and stir until all are incorporated.
8. Combine the cornstarch with the water in a small bowl until paste forms. Add into sauce mixture and stir until sauce thickens.
9. Return the tempeh to the pan and allow to incorporate with the sauce.
10. Enjoy!
