Cheeseburger Tater Tot Cups

Here is what you’ll need!

Cheeseburger Tater Tot Cups
Servings: 8-12

INGREDIENTS
1 bag frozen tater tots, thawed
½ cup onion, minced
2 cloves garlic, minced
1 pound ground beef
1 teaspoon salt
1 teaspoon pepper
1 teaspoon Worcestershire
1 cup cheddar cheese, grated

Garnish
Cherry tomatoes, sliced
Pickles, sliced
Romaine lettuce, chopped
Sesame seeds

PREPARATION
Preheat oven to 350°F/180°C.
In a greased muffin tin, place five tater tots into each cup. Press the tater tots with a spoon into a cup shape. Bake the tot cups for 25 minutes. Allow to cool for five minutes.
In a large skillet over medium heat, cook the ground beef, onion, and garlic, and then drain on paper towels.
Add in the Worcestershire, salt, and pepper. Remove from heat.
Spoon about 1 tablespoon of the burger mixture into each cup. Sprinkle cheese on top.
Bake for 10 minutes or until the cheese is melted. Allow your burger cups to cool slightly before topping.
Top your burger cups with the cherry tomatoes, pickles, and sesame seeds.
Enjoy!

Cheesecake-Filled Banana Bread

Here is what you’ll need!

Cheesecake-Filled Banana Bread
Servings: 10 (in a 9×5-inch loaf)

INGREDIENTS
Banana Bread
2 ripe bananas
1 large egg, beaten
½ cup light brown sugar
¼ cup granulated sugar
½ cup butter, softened
1 teaspoon vanilla extract
¼ cup Greek yogurt
1 cup all-purpose flour
Pinch of salt
1 teaspoon baking soda

Cream Cheese Filling
1 large egg
4 ounces softened cream cheese (½ block)
¼ cup granulated sugar
3 tablespoons all-purpose flour

PREPARATION
1. Preheat the oven to 350˚F/180˚C.
2. In a medium bowl, mash bananas. Mix eggs, brown sugar, white sugar, butter, vanilla extract, and yogurt into the mixture.
3. Add flour, salt, and baking soda and mix until well combined.
4. To prepare the cream cheese filling, mix egg, cream cheese, sugar, and flour in a small bowl.
5. Pour half the banana batter into a greased 9×5-inch bread pan. Pour cream cheese filling evenly over the banana batter. Pour the remaining banana batter on top of the cream cheese filling.
6. Bake for about 50 minutes, or until a toothpick comes out clean from the middle of the bread. (Baking times may vary, so keep an eye on the bread.)
7. Allow to cool for 15 minutes before serving.
8. Enjoy!

Easy Cheesy Crackers

Here is what you’ll need!

Homemade Cheese Crackers
Servings: 6-8

INGREDIENTS
8 ounces shredded cheddar cheese
4 tablespoons unsalted butter, room temperature
1 teaspoon salt
1 cup flour
2 to 3 tablespoons ice water

PREPARATION
1. Preheat oven to 350˚F/180˚C
2. Using a hand mixer or standing mixer, combine cheese, butter, and salt in a large bowl.
3. Once combined, mix in the flour and add the ice water one tablespoon at a time. The dough should hold together but crumble apart if you break it up in your hand. If it seems too dry, add a little more ice water.
4. Separate dough into two halves and pack together into discs. Wrap in parchment paper and chill in the refrigerator for 30 minutes.
5. Roll out dough to ⅛ of an inch, pinching the cracks on the ends.
6. Cut into 1 inch x 1 inch squares and pierce a hole in the middle of each square for ventilation during baking.
7. Place the separated crackers on a parchment paper-lined baking sheet. Bake for 13 minutes, or until golden brown.

One-Pot Cheesy Lemon Chicken Pasta
Servings: 5

INGREDIENTS
2 tablespoons olive oil
1 medium yellow onion, diced
1 pound chicken breast, cut into bite-sized pieces
Salt, to taste
Pepper, to taste
2 cloves garlic, minced
2 ½ cups uncooked penne
2 cups chicken broth
3 tablespoons lemon juice
3 full cups spinach
3 ounces cream cheese
½ cup shredded mozzarella cheese
½ cup Parmesan cheese
Zest from 1 lemon, for garnish

PREPARATION
1. In a large pan or skillet, heat olive oil over medium heat. Add onions and stir until soft.
2. Add chicken, season with salt and pepper, and cook until browned.
3. Stir in garlic and cook for an additional minute.
4. Add uncooked pasta, chicken broth. Stir and bring to a boil. Reduce heat to low, cover and simmer for 20 minutes.
5. Uncover, stir and cook an additional 5 minutes, or until all of the liquid has been absorbed by the pasta.
6. Turn off heat, stir in lemon juice, spinach, cream cheese, mozzarella cheese and Parmesan cheese. Stir until cheese has melted and spinach wilts.
7. Garnish with lemon zest and enjoy!

Cheesy Pretzel ‘Corn’ Dogs

Cheesy Pretzel ‘Corn’ Dogs
Makes: 6-8

INGREDIENTS
6-8 slices of cheese
5-8 mini frankfurters

Pretzel dough
250 millilitres water
3 tablespoons dried yeast
1 tablespoon salt
350 grams flour

1 litre of water
3 tablespoons bicarbonate of soda

1 egg yolk
Sea salt

PREPARATION

1. Preheat the oven to 180°C/350°F.
2. Wrap the frankfurters in the cheese and secure a long cocktail stick through the end of the frankfurters.
3. Place on a tray and freeze for 20 minutes.
4. Meanwhile, make the pretzel dough. Combine the the water, dried yeast, and salt.
5. Mix in the flour and combine together with your hands.
6. Knead the dough for about 8-10 minutes until it feels smooth and elastic.
7. Break off chunks of the dough and roll into long rope shapes.
8. Wrap the dough ropes around the frankfurters.
9. In a large pot, bring the water to a boil and add the bicarbonate of soda. Dunk the frankfurters in the water for about 3 minutes.
10. Place on a tray and coat with the egg yolk and a sprinkling of sea salt.
11. Bake for 18 minutes until golden brown and cooked through.
12. Serve with mustard and ketchup.
13. Enjoy!

Veggie-Packed Tomato Sauce

A delicious and easy way to eat veggies all month!

Here is what you’ll need!

Veggie-Packed Tomato Sauce
Makes: 1 gallon

INGREDIENTS
Olive oil
2 cups carrots, chopped
4 cups onion, chopped
2 cups red pepper, chopped
2 cups celery, chopped
5 cloves garlic, sliced
2 tablespoons oregano
2 tablespoons basil
1½ cup tomato paste
8 cups whole peeled tomatoes
2 cups water
Salt
Pepper

PREPARATION
In a large pot at medium-high heat, add the olive oil and carrots to the pot. Cook the carrots for about 10 minutes until they start to brown slightly.
Next add the chopped onion, red bell pepper, celery, garlic, oregano, basil, salt, and pepper to the pot and cook until the vegetables are caramelized and tender.
Add the tomato paste, stir it into the vegetables, and allow the tomato paste to brown deeply. It should be very aromatic before moving forward.
Add the canned tomatoes, bring the sauce to a boil, and then reduce to a simmer. Simmer the sauce for at least 1 hour.
Add the sauce to a blender in batches or use an immersion blender to puree the sauce to your desired consistency.
Let the sauce cool completely and then pour the sauce into freezer-safe bags. Place the bags into a leak-proof container/tray, and freeze for up to one month.
Reheat the frozen sauce with ½ cup of water in a pot until it comes to a boil and then use as desired. Enjoy!

CHEWY GRANOLA BARS
Makes: 4

INGREDIENTS
2½ cups old-fashioned oats
2½ cups rice cereal
½ cup brown sugar
½ cup coconut oil
½ cup honey
½ teaspoon salt
½ teaspoon vanilla

Chocolate Chip
½ cup chocolate chips

Apple Cinnamon
½ cup dried apples
1 teaspoon cinnamon
¼ teaspoon nutmeg

Cherry Almond
½ cup sliced almonds
½ cup dried cherries

Peanut Butter Crunch
½ cup peanut butter
½ cup pretzels, crushed
½ cup chocolate candies

PREPARATION
1. In a large mixing bowl, combine the oats, rice cereal, coconut oil, honey, brown sugar, salt, and vanilla until evenly mixed.
2. For chocolate chip, take ¼ of the oats mix and combine with chocolate chips.
3. Stir until mixed and move the mixture to a small baking dish.
4. For Apple Cinnamon, take ¼ of the oats mix and combine with dried apples, cinnamon, and nutmeg. Stir until mixed and move the mixture to a small baking dish.
5. For Cherry Almond, take ¼ of the oats mix and combine with almonds and cherries. Stir until mixed and move the mixture to a small baking dish.
6. For Peanut Butter Crunch, take ¼ of the oats mix and combine with pretzels, peanut butter, and chocolate candies. Stir until mixed and move the mixture to a small baking dish.
7. Bake each bar mixture at 350°F/175°C for 5-8 minutes.
8. Let granola cool and then cut into desired bar shape.
